Pho - spelled with a “Ph”
The bustle and hubbub of Pho Saigon II was as overwhelming as the large, steaming bowls of soup that were delivered minutes after I ordered. Before me was an army of eating accoutrements—this wasn’t a chopsticks only event.
With three kinds of flavorful sauces, a dish of bean sprouts and Thai basil garnish, I phlavored the soup with a lemon wedge, and attempted to sample the seafood broth. My spoon hit the surface of a veritable inland sea of soup, and I reluctantly slurped the hot liquid. It predictably burned my tongue. But it did so with a delicious kick of spice and savor.
Pho, normally appearing with several complicated accents on the “o,” is a Vietnamese dish traditionally made with rice noodles in beef broth. It can be made with any kind of meat, including some exotic varieties such as fatty flank, or seafood, and is always delicious. With the right amount of hoisin or sriracha hot sauce, pho can be spicy enough to fill one’s most Wilde desires.
